Turmeric Farro Soup

- 1 lb turkey breasts
- 16 oz vegetable broth
- 1 can great northern beans
- 2 tsp coconut oil
- 1.5 tsp sea salt
- 1.5 tsp cumin
- 1.5 tsp freshly ground black pepper
- 1 tbs turmeric
- 6 oz kale chopped
- 2 cups farro cooked
- 1 yellow bell pepper chopped
- ½ small yellow onion chopped
- Preheat oven to 350 degrees Fahrenheit.
- Rinse and dry farro, place in a medium pot and add enough water to cover.
- Salt the water and bring to a boil, then cover and simmer for 25 minutes, drain and set aside.
- Meanwhile, bring cast iron skillet to high heat, add 1 tsp coconut oil.
- Season turkey breasts with ½ tsp salt and ½ tsp pepper. Sear for 3-4 minutes on each side.
- Place cast iron skillet in oven and bake for 15 minutes.
- Remove skillet from heat, and let rest for 5 minutes before slicing turkey.
- Bring large pot to medium high heat, add 1 tsp coconut oil.
- Add bell peppers and onions, season with salt, pepper, turmeric, and cumin. Stir often until vegetables soften.
- Add vegetable broth, beans, and farro and bring to a soft boil.
- Add sliced turkey breasts, then cover and simmer in large pot for 30 minutes.
- Toss in chopped kale during last 10 minutes of cook time.
- Serve alongside pita bread or pita chips.
