One Skillet Chicken and Brown Rice

- 1 lb thin cut organic chicken breast
- 2 cups pre-cooked brown rice
- 1 can organic sweet corn
- 1 lime
- 1 tsp coconut oil
- ½ tsp freshly ground pepper
- ½ tsp kosher salt
- 1 tbs fresh salsa
- 4 springs cilantro
- Bring large skillet to medium high heat and pour coconut oil into pan.
- Season chicken with salt and pepper on both sides, place into skillet.
- Cook each side for 5 minutes until juices run clear. Chicken is fully cooked at an internal temperature of 165 degrees Fahrenheit.
- Move chicken to a clean plate.
- Drain corn and heat it up in the same skillet, let it absorb all the residue on the pan.
- Mix pre-cooked brown rice into skillet with corn.
- Place chicken on top of corn and rice, then cover with top.
- Move from heat and let rest for 5 minutes.
- Pour salsa over chicken and garnish with limes and cilantro.
