Zucchini Spaghetti

I love spaghetti and meatballs just as much as any busy, working mom, overworked millennial, or college student on a budget! This recipe is so much better for you than traditional recipes, my Zucchini Spaghetti not only looks bright and delicious, but it eliminates the unnecessary carbs and replaces them with nutritious zucchini spirals from Veggie Noodle Co. (Thanks for the coupons guys!)

One pan zucchini spaghetti and ground turkey.
Ingredients
  • 1 lb ground turkey
  • 8 oz sliced baby bella mushrooms
  • 1 container Veggie Noodle Co. Zucchini Spirals
  • 1 tbs coconut oil
  • 14 oz marinara sauce
  • 1 tsp salt
  • 1 tsp freshly ground pepper
  • 1 tsp red pepper flakes
  • 4 sprigs freshly chopped basil
Instructions
  1. Bring large skillet to medium high heat, add coconut oil.
  2. Add ground turkey, and with a wooden spoon break apart turkey as it browns.
  3. Season with salt, pepper, and red pepper flakes.
  4. Add mushrooms and stir until fully cooked through.
  5. Lower heat and add marinara sauce, simmer for 3-5 minutes
  6. Add zucchini spirals and stir until warm.
  7. Garnish with freshly chopped basil and serve.
