10 Minute Shrimp Stir Fry

I’m sure I’m not the only one who purchases fresh vegetables from the supermarket and tosses them into the veggie drawer, only to forget about them for a few days! Before panic sets in, I’ll grab all the veggies that are beginning to wilt and commit to integrating them into my next meal. This week one green pepper and half a sweet onion were the sad vegetables I pulled from the fridge. This recipe requires whatever veggies you have on hand and some shrimp!

Quick and easy one skillet shrimp stir fry.
Ingredients
  • 1 lb shrimp
  • 2 tsp coconut oil
  • 1 medium sweet onion
  • 1 green bell pepper
  • 8 oz frozen green beans
  • 6 oz frozen carrots
  • 2 lemons
  • 1 tsp freshly ground pepper
  • 1 tsp kosher salt
  • 1 tsp Adam's Reserve White Wine & Butter Garlic Seasoning
Instructions
  1. Wash vegetables and shrimp separately then set to the side.
  2. Peel shrimp, rinse with cold water to remove any gritty residue, place on clean plate.
  3. Chop onion and bell pepper into large chunks.
  4. Bring large skillet to medium high heat and pour in 1 tsp coconut oil.
  5. Season shrimp with salt, pepper, and white wine seasoning, then saute in pan until just cooked through.
  6. Remove shrimp from pan and place on another clean plate.
  7. In the same skillet, add 1 tsp coconut oil and saute the chopped onion and green bell pepper.
  8. Once previous vegetables are softened, add in frozen green beans and carrots.
  9. Place lid on skillet, and lower the heat to medium, let the vegetables steam for a couple minutes.
  10. Add shrimp back into pan and squeeze juice of two lemons.
  11. Place lid back on pan and remove from heat, let rest for 5 minutes before serving.
