Green Curry Chicken

I normally don’t purchase prepackaged cooking sauces but this green curry one was a freebie when you purchase the veggie noodles, such a great bargain! Thanks HEB! The packaging says it’s “spicy,” which I didn’t think was too hot. Nonetheless, I toned it down by adding chicken stock, so you get all the flavor and very minimal heat. Bust out your favorite cast iron grill and let’s get to grilling!

I love how the tomatoes blister and come out softened from the boiling curry and chicken stock! The spinach and veggie noodles cook super fast, so make sure to leave that step to the very end (otherwise they’ll turn to mush). So much bold flavors in one pan! If you’ve never had Gran Padano cheese, it’s basically a less salty version of Parmesan cheese, which I also found at HEB. Remember, chicken is fully cooked at an internal temperature of 165 degrees Fahrenheit.
