Rosemary Red Potatoes

My Rosemary Red Potatoes are boiled, so no frying or basting them in butter! It’s so easy and convenient to make a giant batch of these and spread them out for your weekly meal prep. They’re so simple and versatile, try them in a simple salad or as an easy side. I normally buy the 5 lb bag of red potatoes, since it’s cheaper to buy in bulk, for around $3! Stretch those $3 and get the most for your money, smart, simple, meal prep!

Boiled rosemary red potatoes.
Ingredients
  • 6 medium red potatoes chopped
  • 4 sprigs fresh rosemary
  • 1 tbs red pepper flakes
  • 1 tbs sea salt
  • 1 tbs freshly ground black pepper
  • 2 tbs grillin' rib rub seasoning
  • 2 tsp cumin
  • 8 cups water
Instructions
  1. Bring large pot of salted water to a boil.
  2. Add red pepper flakes, sea salt, black pepper, grillin' rib rub, and cumin.
  3. Add red potatoes and boil for 15 - 20 minutes, or until potatoes are soft when pierced with a fork.
  4. Garnish with fresh rosemary and red pepper flakes, season with salt to taste.
