Cilantro Lime Slow Cooker Chicken

I have a thing for limes, I literally put it on everything! Maybe it’s my Mexican-ness, #sorrynotsorry! And there’s no exception when it comes to my meals! The cooking sauces from HEB are so good, just toss it in during the last hour of cook time. My Cilantro Lime Slow Cooker Chicken makes a great protein for your meal prep or toss it into a salad, enchiladas, you name it!  I made quinoa bowls with the shredded chicken, and it really stretched out the amount of meals I got from it.

Cilantro lime slow cooker chicken.
Ingredients
  • 1.5 lbs chicken breast
  • 1 cup white onion chopped
  • 1 tbs olive oil
  • ½ tsp garlic powder
  • ½ tsp black peppercorns
  • ½ tsp sea salt
  • 1 package HEB Cilantro Lime Cooking Sauce
  • 3 sprigs cilantro
  • 2 limes
Instructions
  1. Place olive oil, chicken breast, and onions in slow cooker. Season with garlic powder, peppercorns, and sea salt.
  2. Cover and slow cook on high for 4 hours or on low for 6.
  3. During the last hour of cook tine, add the HEB cooking sauce.
  4. When chicken is fully cooked, carefully shred using tongs or two forks.
  5. Serve with freshly squeezed lime juice and cilantro.
