One Pan Chicken and Brown Rice

Sometimes you’ve had an exhausting day and you don’t feel like cooking, but instead of picking up some fast food, remember you have goals to meet! Don’t let one moment of weakness take you back one day. It’s on these bad days that you need to get home and just suck it up for 15 minutes, you’ll feel so much better afterwards! To keep myself on track, I normally take out 1 lb of chicken and let it slowly defrost in the fridge while I’m at work all day. That way I have a protein ready to cook once I get home, zero excuses! This one pan chicken and brown rice meal is an easy mid-week meal to help you get over that slump!

1 cup of brown rice contains 88% of the recommended daily amount of manganese, which is a mineral that helps digest fats. Brown rice is naturally gluten free and unlike white rice, is a whole grain which makes it more nutritious. (White rice is just brown rice without the bran and germ of brown rice.) Rice is such an important food staple for the average person, so give brown rice a chance, I actually enjoy the texture and flavor a lot better!

One Skillet Chicken and Brown Rice
Ingredients
  • 1 lb thin cut organic chicken breast
  • 2 cups pre-cooked brown rice
  • 1 can organic sweet corn
  • 1 lime
  • 1 tsp coconut oil
  • ½ tsp freshly ground pepper
  • ½ tsp kosher salt
  • 1 tbs fresh salsa
  • 4 springs cilantro
Instructions
  1. Bring large skillet to medium high heat and pour coconut oil into pan.
  2. Season chicken with salt and pepper on both sides, place into skillet.
  3. Cook each side for 5 minutes until juices run clear. Chicken is fully cooked at an internal temperature of 165 degrees Fahrenheit.
  4. Move chicken to a clean plate.
  5. Drain corn and heat it up in the same skillet, let it absorb all the residue on the pan.
  6. Mix pre-cooked brown rice into skillet with corn.
  7. Place chicken on top of corn and rice, then cover with top.
  8. Move from heat and let rest for 5 minutes.
  9. Pour salsa over chicken and garnish with limes and cilantro.
