Roasted Red Pepper Hummus

Super Bowl Sunday is exactly one week away! So if you’re in Houston like me, you’ve already seen the major transformations happening across the city! Brace yourself for all the craziness and events going on, and if you’re attending a Super Bowl Party, it’s time to start thinking about what dish you’re going to bring. It’s easy to get tempted with all the greasy foods that’ll most likely make an appearance, so plan ahead and bring a crowd pleasing appetizer. My Roasted Red Pepper Hummus can be prepared overnight so you just grab and go on Sunday!

Roasted Red Pepper Hummus
Ingredients
  • 2 red peppers
  • 1 can organic garbanzo beans
  • 3 tbs tahini
  • 2 cloves garlic
  • 2 tbs olive oil
  • 1 tbs water
  • 1 tbs red pepper flakes
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp cumin
  • 3 sprigs chopped fresh basil
Instructions
  1. Set oven to broil and roast peppers for 5 minutes on each side.
  2. Immediately put into small bowl and cover with plastic clingy wrap for 5 minutes.
  3. Peel skin off peppers and remove seeds.
  4. Place peppers, garbanzo beans, tahini, garlic, olive oil, water, red pepper flakes, black pepper, salt, and cumin into small blender or food processor.
  5. Blend until smooth.
  6. Garnish with chopped basil and serve with pita chips.
