Watermelon Paleta Margaritas

You know those spicy Watermelon lollipops we used to eat as a child? The ones from Mexico, where you’re tongue would get all cut up, but you would eat them all anyway? Well I finally created a recipe so that we can enjoy them as adults – in a Watermelon Margarita with a chili rim! Why didn’t I think of this sooner?! Don’t ask questions, just go get the ingredients and make them now! (Funny store, my first time EVER having alcohol was actually in Mexico, sorry Mom!)

Watermelon margaritas with a chili rim, a childhood favorite lollipop turned into an adult treat.
Ingredients
  • 5 oz Freshly squeezed raw watermelon juice
  • 1.5 oz Freshly squeezed raw orange juice
  • 1 oz agave nectar
  • 1 oz agave lime cocktail mixer
  • 1.5 oz tequila
  • 1 lime
  • 1 cup ice
  • 1 tsp Tajin
Instructions
  1. Rim a margarita glass with Tajin.
  2. Add ice, lime juice, watermelon juice, orange juice, agave nectar, agave lime cocktail mix, and tequila in a large shaker.
  3. Shake well, and serve over ice, garnish with a lime and serve!

For this recipe I went with a tequila tradicional, Corralejo Reposado, which has a light golden color. This tequila has smooth citrus notes and finishes with vanilla wood tones. Not to mention the bottle is a beautiful reminder of the blue agave fields.

Important! Do not buy watermelon juice from concentrate, it absolutely has to be freshly squeezed. A good indicator of all natural goodness, is if you see a separation in the drink, see photo below:

I also found this all natural mix at Home Goods, which makes it easy to make these margaritas in large batches. The main ingredients are agave nectar and lime juice, perfect for making a pitcher. If you cant find something similar, simply cut several limes in advance and squeeze away! (2 limes per margarita and 1-2 oz agave nectar depending on how sweet you like it.) Salud!
