Healthy Banana Bread

So, you have a few overripe bananas that you need to get rid of stat? This always happens to me, but before you toss them out I have a solution for you! It never fails, I always end up with a couple that are too ripe to eat or blend in a smoothie. I feel guilty throwing food away, so I looked through my pantry and put together a healthy banana bread recipe using what I had on hand! This recipe is so easy, you’ll never throw away an overripe banana again!

  
The best part of this recipe is that it can be adjusted to what you have on hand! No sugar and no butter saves you from the unnecessary calories in traditional recipes, and you won’t be missing out on any of the flavor! If you don’t have a loaf pan just pour the batter in a cupcake pan and you magically have muffins!

Banana bread has no rules! You can enjoy it in the morning with a cup of coffee, or as a midday snack, or as an after dinner dessert! The loaf can be left at room temperature for a maximum of two days, any longer than that and I would put it in the fridge. It’s not just healthy banana bread, it’s delicious too! Easy One Bowl Healthy Banana Bread
Ingredients
  • 2 or 3 ripe bananas
  • 2 eggs
  • 1¾ cups whole wheat flour
  • ⅓ cup melted coconut oil
  • ½ cup maple syrup or honey
  • ¼ cup milk of your choice or water
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • Pinch of salt
  • Extra add ons: chopped pecans, raisins, chocolate chips, dried fruit etc.
Instructions
  1. Preheat oven to 325 degrees Fahrenheit.
  2. Place parchment paper in a 9x5 loaf pan.
  3. In a large mixing bowl, mash bananas together.
  4. Add oil, maple syrup, milk, eggs, and whisk.
  5. Stir in the vanilla extract, baking soda, cinnamon, and a pinch of salt.
  6. Mix in flour, small banana chunks are ok.
  7. Pour the batter into the loaf pan, sprinkle with cinnamon on top and optional toppings.
  8. Bake for 1 hour, or until toothpick inserted in the center comes out clean.
  9. Let cool for at least 10 minutes before slicing.

  2. Saw your recipe and just happened to have two ripe bananas… I couldn’t resist 😸 It was super easy!! I only had enough flour for 1 1/2 cups, but it still turned out well! Probably more moist than if I had the other 1/4 cup. Awesome recipe!! 👌🏼👌🏼
